Chocolate Jaffa Cheesecake
This one really blew my socks off so I hope it will do the same for you. I had never really been a fan of anything orange chocolate flavoured, until I tasted this little devil. It's rich dark chocolate flavour combined with a hit of orange will most likely have you diving in for more!
Sweet sweet Raw Golden Equadorian Cocao Powder. Who needs chocolate when you have this?!
2 cups nuts - 1/2 almonds, 1/2 walnuts
1/4 cup raw cocao powder
1/4 cup rice malt syrup
2 tbs coconut oil
Pinch or two of salt - I like to use Himalayan Salt
Filling:
2-3 cups raw cashews - For best results soak in pure/filtered water overnight (6-8 hrs), rinse then drain
Juice and the rind of 2-3 oranges
1/4 cup coconut milk
1/2 cup raw cocao powder
1/2 cup rice malt syrup
1/4 coconut oi1 tsp vanilla bean extract
Pinch or two of salt
What to do:
Using a food processor blend the base nuts until they turn into chunky crumbs. Add the rest of the base ingredients in turn and mix until it starts to stick together. Tip into your lined spring form cake tin and squash down and out to the sides. Place in the freezer.
Blend together the cashews until smooth, gradually adding all the liquid ingredients and the orange rind. Add the rest in then blend until super smooth!
Pour over your base, pop cm cubes of orange into the mix and vwoila! Place back in the freezer overnight or at least 6 hours.
Take out when half set to grate some more rind on top to decorate or place some orange slices.
Take out half an hour before serving.
